Moisture
During roasting oils that give coffee its characteristic flavour are released and begin to deteriorate quickly. Coffee is also hygroscopic (which means it loves water - just like salt and sugar). It also absorbs humidity and will take on strong flavours such as onion and garlic, so it is essential the coffee is stored correctly for maximum flavour retention.
Due to coffee's sensitivity, new bags of coffee should only be opened as needed. Once opened it needs to be stored in a clean dry, airtight container in a dark space.
